Esta variedad aut\u00f3ctona es una de las joyas escondidas de nuestra huerta, y es uno de los productos que m\u00e1s cari\u00f1o tenemos en Ra\u00edces.<\/p>\n\n<h2 class=\"wp-block-heading\">Qu\u00e9 es el tomate huevo de toro<\/h2>\n\n<p>Es un tomate de gran tama\u00f1o (entre 400 y 800 gramos), con forma acorazonada y la piel ligeramente rugosa. Su color va del rosado al rojo intenso, con costillas marcadas. Pero lo que lo hace \u00fanico es su <strong>textura carnosa, casi sin pepitas, y un equilibrio perfecto entre acidez y dulzor<\/strong>.<\/p>\n\n<h2 class=\"wp-block-heading\">Por qu\u00e9 M\u00e1laga lo cultiva mejor<\/h2>\n\n<p>El microclima del valle del Guadalhorce \u2014donde est\u00e1 Alhaur\u00edn de la Torre\u2014 le da las condiciones perfectas: muchas horas de sol, suelos arcillosos y una humedad nocturna que concentra los az\u00facares de la fruta. De ah\u00ed su sabor pleno cuando lo comes en temporada (de junio a septiembre).<\/p>\n\n<h2 class=\"wp-block-heading\">C\u00f3mo lo usamos en Ra\u00edces<\/h2>\n\n<p>Cuando est\u00e1 en su mejor momento, lo tratamos con el m\u00ednimo intervencionismo:<\/p>\n\n<ul class=\"wp-block-list\"><li><strong>Cortado en rodajas gruesas<\/strong>, sal en escamas, AOVE de Co\u00edn y unas hojas de albahaca. Nada m\u00e1s.<\/li><li>En nuestra <strong>pipirrana en c\u00e9viche<\/strong> (Mejor Tapa de Andaluc\u00eda 2022), donde aporta cuerpo y dulzor a la mezcla.<\/li><li>En el <strong>salmorejo de huevo de toro<\/strong>, una versi\u00f3n m\u00e1s ligera que la cordobesa pero con el mismo car\u00e1cter.<\/li><li>Asado en horno de carb\u00f3n con miel de ca\u00f1a y queso ib\u00e9rico, como entrante de invierno.<\/li><\/ul>\n\n<h2 class=\"wp-block-heading\">D\u00f3nde comprarlo (y c\u00f3mo elegirlo)<\/h2>\n\n<p>En el <strong>Mercado de Atarazanas<\/strong> (M\u00e1laga capital) y en mercadillos de Alhaur\u00edn, Co\u00edn y C\u00e1rtama lo encuentras de junio a septiembre. Para elegir uno bueno: que pese (es buena se\u00f1al de jugosidad), que las costillas est\u00e9n bien marcadas y que ceda ligeramente al apretarlo sin hundirse. Si ves uno que parece imperfecto o feo, mejor: el huevo de toro \u00abfeo\u00bb suele ser el m\u00e1s sabroso.<\/p>\n\n<p>Cuando llega la temporada, lo encontrar\u00e1s en nuestra carta.
